With 3 peach trees in my yard I've had to get creative with my peach recipes and with 4 kids who love fruit snacks and fruit rollups. These homemade fruit leathers seemed like an obvious choice.
You just need 4 simple ingredients: peaches, water, lemon juice and sugar or some type of sweetener. I used Lakanto monkfruit sweetener in mine.
Simply peel and slice the peaches into a large stock pot. Removing the pits.
Mix together the ingredients
Bring the pot to a boil, stirring often. Simmer for about 15-20 min or until the fruit is tender and soft.
Turn off burner and let cool. Once cool blend mixture in blender or with hand mixer until fairly smooth (small bits and bumps are ok). Line a 13 x 18" baking sheet with plastic wrap and spread a thin 1/4" layer of peach mixture over pan evenly.
Bake mixture in oven at about 130 degrees F for about 6-8 hours or until hard to the touch. Mixture will darken. Let cool.
Remove plastic wrap from dried peaches, place on a cutting board and using a pizza cutter cut into thin strips.
Wrap each strip up in plastic wrap or parchment paper and store in an air tight container (if they make it that far before being eaten).
